White tea is grown in the high mountains of Fujian province in southern China, where it is only harvested a few days each year. This makes it a rare, coveted ingredient. The leaves are gathered, then dried and steam roasted to yield a high-quality product. The tea leaves are rich in antioxidants (polyphenols and flavonoids), which protect against free radicals while also preserving color.
